Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 cup Brown sugar
  • 1 cup Unsalted butter At room temperature
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Milk
  • 1 cup Semi-sweet chocolate chips
  • 1 cup Pitted cherries Fresh or frozen

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease and line a 9x13-inch baking pan with parchment paper.
  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until just combined. Be careful not to overmix.
  • Gently fold in the chocolate chips and cherries using a spatula.
  • Pour the batter into the prepared pan and spread evenly with a spatula.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, decorate with powdered sugar, frosting, or whipped cream and garnish with additional cherries and chocolate chips.

Notes

If using frozen cherries, thaw and drain them thoroughly before adding to the batter to avoid excess moisture. Overmixing the batter can result in a dense cake, so mix gently and only until combined for the best texture. For extra flavor, you can soak the cherries in a bit of cherry liqueur or almond extract before folding them into the batter.
