Ingredients
  

  • 1 cup Butter (softened)
  • 1 cup Brown Sugar (packed)
  • ½ cup Granulated Sugar
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 1 ½ cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • ½ tsp Salt
  • 3 cups Old-Fashioned Oats Can use quick oats
  • 1 cup Raisins

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In a separate bowl, combine the dry ingredients: flour, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet mixture, stirring just until combined.
  • Fold in the oats and raisins until evenly distributed throughout the dough.
  • Drop spoonfuls of dough (about 1-2 tablespoons per cookie) onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the cookies are golden brown around the edges.
  • Let the cookies cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.

Notes

For thicker and chewier cookies, consider chilling the dough in the fridge for 30 minutes to 1 hour before baking. You can use old-fashioned oats for a chewier texture or quick oats for softer cookies, depending on your preference. If you’re not a fan of raisins, feel free to substitute them with chocolate chips, dried cranberries, or chopped nuts like walnuts or pecans. To store the cookies, place them in an airtight container at room temperature for up to 1 week, or freeze them for up to 3 months. Keep an eye on the cookies as they bake, checking at 10 minutes for doneness, as baking times may vary slightly depending on your oven. The cookies should be golden brown around the edges when they’re ready.
