  • 1 tablespoon Baking powder
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 1 ½ cups Turkey bacon Crisped up for a savory, non-pork alternative
  • 1 tablespoon Sugar (optional) Adds a hint of sweetness
  • As needed Butter For greasing the skillet or pan

Instructions
 

  • Preheat the oven to 425°F (220°C). Grease a cast-iron skillet or baking dish with butter and set it aside.
  • Mix dry ingredients: In a large bowl, combine the cornmeal, all-purpose flour, baking powder, and salt. Stir well to ensure even distribution.
  • Add wet ingredients: Create a well in the center of the dry ingredients and pour in the buttermilk. Stir gently until everything is just combined.
  • Fold in the turkey bacon: Add the crisped-up turkey bacon and fold it into the batter. Be careful not to overmix.
  • Pour the batter: Transfer the batter into the greased skillet or baking dish, spreading it evenly. Sprinkle a handful of turkey bacon on top for extra crunch if desired.
  • Bake: Place the skillet in the preheated oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Cool and serve: Let the bread cool slightly before slicing and serving. Enjoy it warm with butter or as a side dish!

Notes

For the crispiest turkey bacon, make sure to cook it well before adding it to the batter. You can pan-fry or bake the turkey bacon until it’s golden brown and crispy. Feel free to customize the recipe by adding herbs like rosemary or thyme for added flavor, or experiment with shredded cheese for a cheesy twist. If you have any leftovers, store them in an airtight container for up to 3 days. To enjoy again, simply reheat in the oven or microwave for the best taste and texture.
