  • 2 teaspoons Extra flour For dusting and shaping the dough

Instructions
 

  • Activate the yeast: In a small bowl, combine warm water (about 110°F) and sugar. Sprinkle the yeast over the water and stir gently. Let it sit for about 5-10 minutes, until the yeast becomes frothy and activated.
  • Prepare the dry ingredients: In a large bowl, whisk together the rye flour, all-purpose flour, and salt.
  • Make the dough: Once the yeast mixture is frothy, add it to the dry ingredients along with the olive oil. Mix everything together until a dough starts to form.
    If the dough is too sticky, add a little more flour (1 tablespoon at a time) until it becomes smooth and elastic. Knead the dough for about 5-7 minutes until it is soft and slightly tacky.
  • Let the dough rise: Place the dough in a lightly oiled bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  • Divide the dough: Once the dough has risen, punch it down to release the air. Divide the dough into two equal portions.ivide the dough into two equal portions.
    To one portion, add cocoa powder and knead it into the dough until it’s fully incorporated and the dough is a dark brown color.

  • Second rise:
    Place the twisted dough on a greased or parchment-lined baking sheet. Cover it with a kitchen towel and let it rise for about 30-45 minutes, until it has puffed up.
  • Preheat the oven:
    Preheat the oven to 375°F (190°C).
  • Bake the bread:
    Once the dough has risen, bake it in the preheated oven for 30-35 minutes, or until the bread has a golden brown crust and sounds hollow when tapped on the bottom.
    If the bread starts to get too dark on top, cover it loosely with foil and continue baking until done.
  • Cool the bread:
    Remove the bread from the oven and let it cool on a wire rack for at least 30 minutes before slicing.
