Ingredients

  • 1 cup (2 sticks) Unsalted Butter At room temperature
  • 2 cups Granulated Sugar
  • 4 Large Eggs At room temperature
  • 1 teaspoon Vanilla Extract
  • 3 cups All-purpose Flour Sifted
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt

Instructions

  • Preheat the Oven: Preheat your oven to 325°F (163°C). Grease and flour a loaf pan or line it with parchment paper.
  • Cream Butter and Sugar: In a large mixing bowl, beat the butter and sugar together using a hand mixer or stand mixer until light and fluffy. This should take about 5-7 minutes.
  • Add Eggs: Add the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Add the vanilla extract and mix until smooth.
  • Sift Dry Ingredients: In a separate bowl, sift the flour, baking powder, and salt together.
  • Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, folding gently until just combined. Be careful not to overmix.
  • Fill the Pan: Pour the batter into the prepared loaf pan. Smooth the top with a spatula to ensure an even rise.
  • Bake: Place the pan in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
  • Cool: Allow the cake to cool in the pan for 10-15 minutes, then remove from the pan and place on a wire rack to cool completely.
  • Serve: Once cooled, slice and serve. You can garnish with powdered sugar or a simple glaze, if desired.

Notes

To ensure the perfect texture, ensure all ingredients are at room temperature, especially the butter and eggs. This allows for better mixing and helps achieve a lighter, fluffier cake. Additionally, be sure not to overmix the batter once the dry ingredients are added, as this can lead to a dense cake. You can add citrus zest (like lemon or orange) or a bit of almond extract to the batter for added flavour.
