Ingredients

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Milk Use whole milk for a richer flavor
  • 1/4 cup Melted butter
  • 2 cups Fresh Ocean Spray cranberries Can substitute with dried cranberries
  • Optional teaspoon Orange zest Adds a citrusy flavor (optional)
  • Optional 1/2 cup Chopped nuts Walnuts or pecans work well (optional)

Instructions

  • Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper to prevent sticking.
  • Mix the Dry IngredienTSIn a large mixing bowl, combine 2 cups of all-purpose flour, 1 cup of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Stir well to ensure the dry ingredients are fully mixedI
  • Mix the Wet IngredientsIn a separate bowl, whisk together 2 large eggs, 1/2 cup of milk, and 1/4 cup of melted butter until fully combined.
  • Combine Wet and Dry IngredientsPour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix, as this can affect the texture of the bread
  • Add the Cranberries
Gently fold in 2 cups of fresh Ocean Spray cranberries (and any optional ingredients like orange zest or chopped nuts) until evenly distributed throughout the batter. If using fresh cranberries, you can toss them in a bit of flour before adding them to the batter to prevent them from sinking.
  • Bake the BreadPour the batter into your prepared loaf pan and place it in the oven. Bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  • Cool the Bread
Once baked, remove the bread from the oven and let it cool in the pan for about 10 minutes. Then, transfer the loaf to a wire rack to cool completely. This will help it slice neatly and prevent it from falling apart.

Notes

Let the cranberry bread cool thoroughly before cutting it. This gives the best texture. Eat it fresh, or keep leftovers in a sealed container at room temperature for up to three days. The bread also works well as a gift for family and friends during holidays or special events. Enjoy baking!
