  • 2 cups Pancake mix Any brand works
  • ½ cup Granulated sugar Can use brown sugar
  • ½ cup Unsalted butter Softened
  • 1 Egg
  • 1 tsp Vanilla extract
  • ½ cup Chocolate chips Optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the pancake mix and sugar.
  • Add the softened butter, egg, and vanilla extract to the dry ingredients. Mix until a dough forms.
  • Fold in the chocolate chips or any desired mix-ins.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. You can also experiment with different add-ins like nuts, dried fruits, or sprinkles for added flavor and texture.
