  • 3 medium-sized Carrots (grated) Grate the carrots finely
  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1/2 cup Butter (softened)
  • 3/4 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper or a silicone baking mat.
  • Prepare Dry Ingredients: In a medium mixing bowl, whisk together the flour, baking powder, cinnamon, and nutmeg. Set aside.
  • Cream Butter and Sugar: In a separate large bowl, cream the softened butter and brown sugar together until light and fluffy.
  • Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract
  • Combine Dry and Wet Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
  • Fold in Grated Carrots: Gently fold in the grated carrots, ensuring they are evenly distributed throughout the dough.
  • Scoop and Flatten Dough: Using a cookie scoop or spoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart. Gently flatten each mound of dough with the back of the spoon.
  • Bake: Bake the cookies in the preheated oven for 12-15 minutes or until the edges are golden brown and the centers are set.
  • Cool: Remove from the oven and let the cookies cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.

Notes

Grate carrots finely. They should be spread evenly in the dough for perfect texture. Do not use wet carrots. Pat them dry with a paper towel before adding to the dough. Chill the dough for at least 30 minutes before baking. This prevents excessive spreading and improves texture. You can add raisins, nuts, or cream cheese frosting for extra indulgence.
