  • 3 eggs Eggs Large eggs preferred
  • 1/2 cup Vegetable oil Any neutral-flavored oil will work
  • 1 cup Water Tap water
  • 8 oz package Cream cheese Softened for easier mixing
  • 1/4 cup Unsalted butter Softened for easier mixing

  • 1/2 cup Shredded coconut Optional, adds texture
  • 1/4 cup Chopped walnuts Optional, for a crunchy texture

Instructions

  • Preheat the Oven:Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  • Prepare the Cake Batter:In a large bowl, combine the strawberry cake mix, eggs, vegetable oil, and water. Mix well until the batter is smooth and fully combined.
  • Pour the Batter into the Pan:Pour the prepared cake batter into the greased baking pan, spreading it out evenly.
  • Make the Cream Cheese Filling:In a separate bowl, beat the softened cream cheese and unsalted butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extractMake the Cream Cheese Filling
  • Add the Cream Cheese Filling:Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife or spatula to gently swirl the cream cheese mixture into the batter, creating a marbled effect.
  • Add Optional Toppings:If desired, sprinkle the chopped strawberries, shredded coconut, and chopped walnuts on top of the batter for extra flavor and texture.
  • Bake the Cake:Place the pan in the preheated oven and bake for 35-40 minutes. The cake is done when a toothpick inserted into the center comes out clean and the top has a slightly cracked appearance.
  • Cool the Cake:Allow the cake to cool in the pan for about 10-15 minutes before cutting it into squares.
  • Serve: Serve warm or at room temperature. Optionally, top with whipped cream or fresh strawberry slices for added flavor and decoration.

Notes

Here are some helpful notes for making the Strawberry Earthquake Cake: Be sure to soften the cream cheese and butter before mixing to ensure a smooth filling. If you prefer, you can substitute the boxed strawberry cake mix with a homemade version, just maintaining the correct consistency. When swirling the cream cheese filling, avoid overmixing to keep the “earthquake” effect intact. You can also customize the cake by adding optional ingredients like shredded coconut, walnuts, or even chocolate chips for extra flavor and texture. Allow the cake to cool for 10-15 minutes before serving to help it set properly. Leftovers can be stored in an airtight container for up to a week, or frozen for up to 3 months. For a gluten-free option, simply use a gluten-free cake mix or make your own from scratch.
